Food ON Demand: Keto Friendly Meatballs

I love new recipes. I’m a big fan of finding new ways to do something. Being new to Keto has prompted that. What I hate are recipe blogs that made you read FOREVER to get to the point. So, I won’t’ do that to you. Let’s jump right in.

Cheesy Ranch Keto Meatballs, my whole family loves!

Ingredients

  • 8 ounces of shredded cheddar cheese

  • 1 sweet pepper, diced (choose the color you like)

  • 1 yellow onion diced

  • 1 pack of hidden valley ranch powder

  • 2 large eggs

  • 1.5 lbs of 80/20 ground beef

  • .5 lbs of ground pork (I prefer Italian mild sausage)

  • .5 cup of heavy cream or whole milk

  • Garlic (I like a lot. Always at least 4 cloves)

  • salt, pepper, smoked paprika (to taste)

Directions

  • PREPARATION
    – Pre-heat oven to 375 degrees
    – Line cookie sheet(s) with foil for easier cleanup
    – Dice sweet pepper and onion into small pieces
    – gather remaining ingredients
  • Roll & Bake
    There are two ways to roll your meatballs.

    Method one – Get a medium-sized ice cream scooper, scoop the meat and release it in line on your cookie sheet.

    Method two – Pick up a palm full of meat and roll in the meat in your palms in a ball and place in line on your cookie sheet. I find rolling therapeutic.

  • Place meatballs in the oven on the top rack and bake until meatballs are cooked through 35 minutes.

    Let sit for 10 minutes before moving to a serving dish, and that’s it. Enjoy!
