Not only am I seeing results but I enjoyed a less guilty relationship with food. These ribs are so good I can’t believe I can eat them and work on my weight. As you know I hate recipe blogs that hold you up in ALL THE WORDS, so lets dig right in.

Fall off the bone goodness with some heat! YASSSS SIS, YASSSS!

Ingredients

  • 1 butcher prepared slap and its tips separated

  • 1/4 cup of parsley

  • 1 yellow onion diced

  • A Thumb of fresh Ginger

  • Walkerswood Jamaican Jerk Seasoning (THIS IS SALTED)

  • Garlic (I like a lot. Always at least 4 cloves)

  • salt, pepper, smoked paprika (to taste)

Directions

  • PREPERATION
    – Pre-heat oven to 420 degrees
    – Line Cookie Sheet with foil

    Make your wet rub
    – Make your vinegar & water solution by mixing 2 parts water 1 part white vinegar
    – Soak your fruit, veggies, herbs and spices: 1 tomato, 1 small yellow onion, 5 garlic cloves, A palm of parsley, A thumb of ginger for 15 minutes, rise throughly and set aside to dry for blending
    – Give parsley, tomoate and Ginger a rough chop and add all other fruit, veggies, herbs and spices into a bolder and blend until nearly smooth.

    Clean your ribs & Tips
    – Remove thin white membrane from the back of ribs and tips. I like to use a metal spoon, face side down to get the membrane to loosen. I can usually pull most of, if not all of the membrane away in one piece.
    – Make your vinegar & water solution by mixing 2 parts water 1 part white vinegar
    – Dip ribs & tips in vingar & water solution for 2 minutes and rise thoroughly.
    – Sit meat in a strainer until excess water drains (about 10 minutes)

  • Rub your meat
    I suggest doing all of this on the cookie sheet you plan to cook on.
    – Rub your ribs and tips front and back with dry seasonings (easy on the salt. The jerk sauce is salted)
    – Mix the Walkerswood Jamaican Jerk Seasoning & your blended items together and generously rub it all over your meat.

    It’s time to cook!
  • – Lay out all meat flat and not touching on the cookie sheet and bake covered with foil for the first 30 minutes.
    – Turn and cook uncovered for the remaining 25 minutes.

    Let sit for 10 minutes before moving to a serving dish and that’s it. Enjoy!
